  • 2 cups cooked rice preferably day-old
  • 2 tablespoons olive oil
  • 2 cloves garlic minced (optional)
  • 1 teaspoon salt or to taste
  • 2 tablespoons green onions chopped for garnish

Instructions
 

  • Prepare the rice by breaking apart any clumps with your hands or a fork so the grains are loose and separated.
  • Heat a cast iron skillet over medium-high heat and add olive oil, letting it warm until shimmering.
  • Spread the cooked rice evenly across the pan and gently press it down using a spatula to form a flat layer.
  • Allow the rice to cook undisturbed for 5 to 7 minutes until the bottom becomes golden brown and crispy.
  • Flip or stir sections of the rice so the crispy bits mix with the fluffy grains and cook for another 2 to 3 minutes.
  • Add salt, optional garlic, and garnish with chopped green onions before serving.

Notes

Use cold day-old rice for the best crispy texture. Fresh rice may contain too much moisture and prevent crisping.
