Ingredients
  

Cake Batter

  • 1 cup whole wheat flour Substitute oat flour for gluten-free
  • 1/4 cup peanut butter unsweetened & strictly xylitol-free
  • 1 mashed banana smooth, no big lumps
  • 2 eggs room temperature
  • 1/2 cup carrots finely grated
  • 1 tsp baking powder
  • 1/4 cup water or unsalted broth add gradually

Instructions
 

  • Phase 1: Prep Work - Preheat your oven to 180°C (350°F) and lightly grease a small cake pan. In a bowl, mash the banana until smooth. Add the peanut butter and room-temperature eggs, whisking until you get a creamy, slightly glossy mixture.
  • Phase 2: Mixing the Batter - Stir in the finely grated carrots. Gradually fold in the whole wheat flour and baking powder. Add the water or unsalted broth a little at a time until you get a thick but pourable batter (similar to muffin batter).
  • Phase 3: Baking & Finishing - Pour the batter into your prepared pan and smooth the top. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool completely before removing from the pan and frosting.

Notes

Chef's Tip: Never frost while the cake is warm—it will melt and slide off! Store in an airtight container in the fridge for up to 4 days, or freeze individual slices for up to 2 months.
